Mojito

Along with the bramble and the amaretto sour, the humble mojito is one of my favourite cocktails. It's super easy to whip up a jug-ful of mojitos, and is an easy crowd-pleaser.

Ingredients:

  • 100 grams sugar

  • 10 grams fresh mint

  • 3 limes, quartered

  • 200 millilitres white rum

  • 500mlsparkling water or lemonade

  • 1 handful ice cubes

  • 1 glassful (per person) crushed ice

Method:

  1. Pick mint leaves from the stems (don't include the stems in the drink) and roll between your palms to bruise them.

  2. Add to the sugar in a tall jug and squish together (muddling) with a wooden spoon, spatula, rolling pin, muddler, whatever is to hand.

  3. Add the limes (you can pre-juice these or add them in quarters into the jug) and repeat the squishing until the juice is on the outside of the limes.

  4. Add rum and stir to combine.

  5. Add sparkling water or lemonade to taste (if you pass out, get someone else to add more).

  6. Add the remaning mint sprigs to the jug, and one to each glass of crushed ice.

  7. Serve the mojitos as cold as possible over crushed ice and garnish with additional lime quarters. Skål!
