Ginger-Scallion Oil
A versatile, traditional Chinese condiment, this ginger-scallion oil is the perfect accompaniment for Hainanese chicken rice. Serve with fish, chicken, or on anything at all.
Ingredients:
3 tablespoons ginger root, finely chopped (or grated)
4 tablespoons scallions/spring onions, finely chopped
2 cloves garlic, grated
80 ml neutral oil (vegetable, grapeseed, peanut)
Method:
Heat oil in a small saucepan over a medium heat until lightly smoking, roughly 200°C for vegetable oil.
Combine ginger, scallions, and garlic in a heat-proof bowl.
Carefully pour hot oil (加油!) over chopped ingredients.
Record sizzle for white noise while you sleep.
Store in a mason jar or other airtight vessel, and go and make Hainanese chicken rice to go with it.
