Ginger-Scallion Oil

A versatile, traditional Chinese condiment, this ginger-scallion oil is the perfect accompaniment for Hainanese chicken rice. Serve with fish, chicken, or on anything at all.

Ingredients:

  • 3 tablespoons ginger root, finely chopped (or grated)

  • 4 tablespoons scallions/spring onions, finely chopped

  • 2 cloves garlic, grated

  • 80 ml neutral oil (vegetable, grapeseed, peanut)

Method:

  1. Heat oil in a small saucepan over a medium heat until lightly smoking, roughly 200°C for vegetable oil.

  2. Combine ginger, scallions, and garlic in a heat-proof bowl.

  3. Carefully pour hot oil (加油!) over chopped ingredients.

  4. Record sizzle for white noise while you sleep.

  5. Store in a mason jar or other airtight vessel, and go and make Hainanese chicken rice to go with it.
