Mayonnaise
Homemade mayo is another one of those things that I just won't buy store-bought anymore because the real thing is too good, and too easy. If you have an immersion/stick blender it comes together in quite literally two minutes.
Ingredients:
1 egg
1 tablespoon lemon juice
1 teaspoon dijon mustard
1 clove garlic, grated
200 millilitres neutral oil
1 pinch fine sea salt
Method:
Add the egg, lemon juice, mustard, and garlic to a tub or jar.
You'll need an immersion/hand blender for this, so make sure the vessel fits the head of the blender.
This might work with a food processor, but no promises.
Pour the oil gently over the top and allow to settle.
Gently dip the immersion blender into the tub/jar and allow to touch the bottom.
Holding the blender completely vertically, spin at high speed until mayonnaise.
Everything should come together very quickly, don't over-blend or do anything fancy.
Give it a stir, and store airtight in the fridge for 1-2 weeks, if it lasts that long.
