100 ml olive oil | |
30 ml red wine vinegar | |
15 g flat-leaf parsley | |
1 fresh red chilli | |
3 cloves garlic | |
5 g dried oregano | |
5 g salt | |
5 g black pepper |

Mise-en-place
Chop the parsley, chilli, and garlic very fine. You can use a food processor for this bit. Combine all of the ingredients in a bowl and then pour the olive oil over the top, and just allow to sit for 10-15 minutes or so.
Once everything is combined, stir together and then place into an airtight container and store, refrigerated, up to two weeks. Serve with steak, fish, chicken, spread on toast, it really is delicious in many applications.

Avoid using a blender for this one, it tends to discolour some of the ingredients.
